This is just a beautiful salad too! So light an refreshing, and so fast to make. Pair it with some rustic bread and you have the perfect summer meal!
You will need:
3 large ripe fresh peaches, sliced
8 oz. container of mozzarella pearls, drained
2 cups cherry tomatoes, sliced in half
¼ cup (or more) fresh basil leaves, sliced thin
¼ cup olive oil
1 ½ TB honey
1 TB balsamic vinegar
Salt and pepper
Balsamic glaze (optional)
Sliced red onion (optional)
Directions for Best Peach Caprese Salad:
First pit and slice peaches and place in large bowl.
Next, halve all of the cherry tomatoes and place in bowl with peaches.
Then chiffonade the basil and drain the mozzarella pearls and place in bowl.
Now in a small bowl, whisk together the olive oil, balsamic vinegar, honey, and gently mix into the bowl making sure all of the ingredients are fully coated.
Add salt and pepper to taste.
You can also add balsamic glaze if you wish along with some sliced red onion.
I prefer it with the balsamic glaze, but my husband likes it without.

Best Peach Caprese Salad
This is THE BEST Peach Caprese Salad! Loaded with seasonal peaches and tomatoes and ready in 15 minutes, this will fast become a family favorite!
Ingredients
- 3 large ripe fresh peaches, sliced

- ¼ cup (or more) fresh basil leaves, sliced thin
