This is the Absolute Best Italian Pasta Salad! So quick and easy to make, you’ll be the hit of the potluck or picnic when you bring this salad! I made mine with gluten-free rotini pasta, but you can use bow-tie pasta or any pasta you wish!! I love how fast this comes together, and it’s pretty too!

I loved using a variety of grape tomatoes, it makes for a beautiful salad. You can also use different colored bell peppers as well. If you can’t find fresh mozzarella pearls, try using cubed provolone or cubed fresh mozzarella.
You will need:
1 (16 oz.) box of Rotini pasta, cooked according to package instructions, rinsed and drained
1 cucumber, peeled and diced
½ red onion, diced
1 green bell pepper
1 cup tri-colored grape tomatoes, halved
8 oz. fresh mozzarella pearls
1 (2.25 oz.) can sliced olives, drained
1 cup prepared Italian dressing, homemade or store bought
8 oz. Genoa salami, chopped
First, cook pasta according to package instructions, rinse in cold water and drain. Make sure it is cool before adding the other ingredients.
Next, dice the cucumber, bell pepper and red onion. Cut the tomatoes in half.
Then chop the salami into bite size pieces.
Finally place everything in a large bowl and pour the Italian dressing on top. Mix thoroughly.
Cover and refrigerate for an hour before serving. You can even sprinkle it with some dried Italian seasonings or grated parmesan cheese!
It’s just the absolute best Italian Pasta Salad! I made this pasta salad completely gluten-free. If you want to make this a gluten-free salad, just make sure you use a gluten-free pasta, salami, cheese and dressing, and everything else is naturally gluten-free!

This is the best Italian Pasta Salad! Comes together in about 15 minutes and you can easily make it gluten-free!
