You will need:
8 cups diced gluten-free bread cubes (diced into ½ inch cubes) – I use a 16oz. loaf of Udi’s gluten-free white bread
½ cup finely diced celery
½ cup finely diced onion
2 cups chicken broth
3 Tablespoons butter
½ teaspoon poultry seasoning
Directions for Best Gluten Free Thanksgiving Stuffing:
First dice the bread into ½ inch cubes. It’s easier to do this when the bread is still partially frozen.
Next place the bread cubes on a cookie sheet and bake in a preheated oven at 250 degrees F for 40 minutes until the cubes are completely dry (don’t rush this, they need to be super hard and I didn’t wait and it turned out a little mushy which I didn’t mind)
Now in a medium saucepan, combine the broth, celery, onion, butter and poultry seasoning over medium high heat.
Simmer until veggies are tender and butter is melted.
Place toasted bread cubes in large bowl
Pour the broth over bread.
Mix well until coated. (gently fold this – I kind of stirred it and it became a little mushy)
Place the dressing into a two quart casserole dish sprayed with cooking spray
Cover with foil and bake at 350 degrees for 30 minutes. Remove foil and bake another 15 minutes.
This is the best gluten free Thanksgiving dressing stuffing I’ve ever had. They flavors are just like my mom’s dressing and aside for my over stirring and under baking the bread cubes, it still was just heavenly! I absolutely loved it and I now make it often throughout the year when I bake a chicken!
