This is simply the BEST Cowboy Caviar recipe! It’s so quick and easy to put together and makes such a great appetizer! Everyone loves this dip and they will be asking you to bring this to the next party or potluck over and over again!

You will need:
1 (15 oz.) can black beans, rinsed and drained
3 Roma tomatoes, seeded and diced
1 green bell pepper, seeded and diced
½ red onion, diced
1 ½ cup sweet corn (thawed if frozen or if canned, drained
¼ cup chopped cilantro
1 jalapeno, diced (and seeded if you don’t want it spicy)
2 avocados, diced*
1/3 cup olive oil
¼ cup white wine vinegar
3 TB fresh lime juice
1 TB granulated sugar
½ tsp salt
½ tsp pepper
¼ tsp garlic powder
Directions for Best Cowboy Caviar:
First for the dressing, combine the olive oil, lime juice, white wine vinegar, sugar, garlic powder, salt and pepper in a small bowl and whisk the ingredients together. Set aside.
Then rinse and drain the black beans. Now dice the bell pepper, red onion, jalapeno and tomatoes
Chop the cilantro. Stir all of the chopped ingredients, along with the cilantro, beans and corn in a large bowl.
Pour the dressing over all of the ingredients in the bowl and mix until thoroughly coated.
Cover and refrigerate for at least an hour for everything to marry.
**Dice the avocado, toss with a little lime juice mix in with the rest of the bowl just before serving.
