This is THE BEST Chop Chop Salad I’ve ever had. I make it all the time and it comes together so fast! It’s perfect for a quick lunch, sometimes I pair a hard boiled egg with it and sometimes a hefty slice of garlic bread. It makes for a great side too, especially with pizza, spaghetti or lasagna. This will become your go-to salad, it’s SO GOOD!

You will need:
3-4 cups of chopped green leaf lettuce
1 cup canned chickpeas (garbanzo beans), drained
4 slices hard salami, julienned
4 slices of deli turkey, chopped
4 slices of provolone cheese, chopped
¼ cup red onion, finely diced
½ cup chopped tomato
2 Tablespoons mayonnaise
1 ½ Tablespoons olive oil
1 ½ Tablespoons red wine vinegar
½ tsp dried oregano
½ tsp dried basil
Directions for Best Chop Chop Salad:
Place the lettuce, chickpeas, onion, tomatoes, meats and cheese into a large bowl.
For an even easier alternative I buy the already chopped lettuce
In a small bowl, whisk together the mayonnaise, olive oil, red wine vinegar and herbs.
Now pour the dressing over the salad and toss.
We love eating this with pizza or a yummy pasta like my Super Easy Lasagna recipe or my Absolute Best Fettuccine Alfredo recipe! Also great as a side salad for my Minestrone Soup with garlic bread! Just the perfect meal. This can be a great dinner salad on it’s own, I originally had this salad in a restaurant and they paired it with a blue cheese salad and a Broadway Pea Salad as a Dinner Salad Trio and it was just the best! Best Chop Chop Salad
This is the best chopped salad! Ready in just 15 minutes, it's the perfect dinner salad or side salad for pizza and pastas!
