You will need:
2 cups diced tomatoes
2 cloves garlic, pressed
¼ cup diced white onion
2 Tablespoons extra virgin olive oil
2 Tablespoons white balsamic vinegar
¼ tsp fresh parsley, chopped
5 large basil leaves, thinly sliced
¼ tsp salt
¼ tsp pepper
Sprinkle of dill
Sweet balsamic glaze and crumbled feta for garnish if desired

First combine the tomato, onion and garlic in a small bowl.
Next whisk together the olive oil, white balsamic vinegar, parsley, salt, pepper and dill. Pour over vegetables and gently stir to coat.
Chiffonade the basil
Brush olive oil on the sliced bread and toast.
Spoon mixture on the toast and sprinkle with basil, feta and balsamic glaze if desired
I didn’t have any feta cheese when I made this but it was so delicious! It’s just the BEST bruschetta!
