These are the best Banana Pudding Cupcakes! So easy to make using a box cake mix and instant banana pudding with real pudding inside the cupcake as a surprise! These are the perfect treat for baby showers, picnics, potlucks or just because. Everyone loves these cupcakes!

You will need:
For the cake:
1 (15.25 oz.) box yellow cake mix
1 (3.4 oz.) box instant banana pudding
1/3 cup vegetable oil
1 ¼ cup water
2 eggs
2 tsp banana extract
For the filling:
1 (5.1 oz) box instant banana pudding
3 cups milk
For the frosting:
Mix 1 tsp banana extract to 1 (14 oz.) container of white frosting or make my best buttercream recipe here
For the decoration:
24 vanilla wafer cookies
Yellow candy coating
Disposable piping bags
Parchment paper

Directions for the best Banana Pudding Cupcakes:
Combine box cake mix, the 3.4 ox box of dry banana pudding, water, vegetable oil, eggs and banana extract in a mixing bowl.
Now beat everything for 1 minute to combine with a hand mixer. Then beat for an additional 2 minutes.
Then divide batter in muffin tins lined with 24 cupcake liners.
Next, bake according to box instructions. When cupcakes are done, let cool completely.
For the filling, combine the 5.1 oz. box of instant banana pudding and 3 cups of milk. Whisk for 2 minutes and let sit for 5 minutes.
Using a melon baller or knife, scoop out the middle of the cupcake making sure you do not go all the way to the bottom of the cupcake.
Now fill the cupcake hole with the banana pudding.
Then place the cupcake core on top.
Next, frost the cupcake with the white frosting (I used a 1M piping tip).
For the decoration, melt the yellow candy coating according to package instructions. Using a piping bag with a small amount of the tip cut off, pipe pretty designs onto a parchment paper lined cookie sheet. Put in refrigerator for about 15 minutes or until completely set.
Place the vanilla wafer and the candy decoration on top of the cupcake. Sprinkle a little vanilla wafer crumbs on top.
Finally, right before serving, slice the fresh banana into 24 slices and dip in lemon juice to prevent browning and set on top of the cupcake.
