Super easy, super moist, this is the Best Banana Bread Ever! It’s my go-to recipe whenever I have overripe bananas and since this is so quick and simple to whip up, I do it all the time! Perfect for breakfast or an afternoon snack. Pairs well with soups on a chilly day too. My kids love to have it as a side with my homemade Minestrone Soup.

You will need:
4 ripe bananas
1/3 cup softened butter
1 egg
1 ½ tsp vanilla
1 tsp baking soda
¼ tsp salt
1 ½ cup all purpose flour
½ cup light brown sugar
¼ cup granulated sugar
Cooking spray
9×5 loaf pan

Preheat oven to 350 degrees and coat pan with cooking spray. Peel and mash the bananas. Add butter and sugars and beat with hand mixer until thoroughly combined. Add eggs and vanilla and mix.
In another small bowl, combine the flour, salt and baking soda. Fold the dry ingredients into the wet ingredients until just combined. Do not overmix!
Pour the batter into the pan
Bake at 350 degrees for 45-55 minutes or until a toothpick inserted in the center comes out clean.
Cool completely before removing from the pan.
