You will need:
1 (10 oz.) box Drake’s Mini Pound Cakes
Blue buttercream frosting – store bought or click here for my recipe
White buttercream frosting – store bought or click here for my recipe
Graham crackers (about 3 full crackers)
Blue and white pearl sprinkles
Shell and starfish sprinkles
#47 (basketweave) piping tip
#32 (small open star) piping tip
Disposable piping bags
Palm tree or beach drink umbrellas
Directions for Mini Beach Pound Cakes:
First, with blue buttercream and basketweave piping tip #47, pipe 3 rows of waves across half of the pound cake to look like water.
Then, crush the graham cracker in a food processor or put them in a zipper bag and crush with a rolling pin until they are fine crumbs.
Next, spread a thin layer of white buttercream frosting on the other half of the pound cake.
Now immediately sprinkle the graham crackers over the white frosting for sand.
Then pipe a line of white buttercream between the sand and the water using the #32 open star piping tip.
Finally, add beach sprinkles and a paper umbrella.
These cute individual mini cakes are perfect for a beach themed party, a summer treat or a picnic! Kids will love to create them too, you can skip the piping tips and simply spread on the frosting to look like waves. Try mixing the blue and white frosting a little too for a water effect!
