Step-by-step directions:
Next, combine the sugar and cinnamon in a small bowl and set aside.
Now, fill a large mixing bowl halfway with water and squeeze the juice of 1/2 a lemon into it. Set aside.
Then, slice apples vertically in half and core apple. Place cut apple on cutting board and slice into very thin strips. You can use a mandoline for this for easy slicing. Immediately put them in the bowl of lemon water to prevent browning.
After all of the apples have been sliced, place the entire bowl into the microwave and heat of high for 5 minutes to soften the apples. (you do not want the apples to snap when you roll them) Strain the apples and set aside.
Now, roll out the thawed pastry sheet (follow directions on the package to thaw) to 12 inches by 12 inches on a floured surface.
Cut 6 equal strips (2 inches) using a pizza cutter. Take a strip of the pastry and brush off the excess flour.
Next, spread a layer of the apple jelly mixture on the pastry strip. Arrange 6-8 apple slices on the dough overlapping one another. Make sure the top (skin side) of the slices sticks a little out over the top of the strip.
Then, sprinkle with cinnamon sugar.
Fold up the bottom part of the dough.
Next, starting from one end, roll the dough, making sure the apple slices are in place.
Pinch the edge at the end pressing with your fingers.
Now, place in a greased muffin cup.
Finally, bake at 375 degrees for 35-40 minutes or until pastry is golden.
