These Bacon and Cheese Stuffed Mushrooms are the perfect appetizer because they are SO EASY to make! Stuffed with bacon, cream cheese, parmesan and chives, what could be better! You will need:
1 (8oz.) package of cream cheese, softened
½ cup finely chopped cooked bacon (reserve 1 TB for topping)
1 TB chopped chives or finely chopped green onion
¼ tsp garlic powder
¼ tsp black pepper
½ cup freshly grated parmesan cheese
About 30 small whole fresh white button mushrooms
Olive oil
Chopped fresh parsley (optional)
Directions for Bacon and Cheese Stuffed Mushrooms:
Preheat oven to 400 degrees F
First, clean mushrooms by wiping them with a damp cloth or paper towel and remove stems. (Removing the stems is easy, just push the stem to the side and it will pop right out).
Then, chop the cooked bacon and chives into small pieces
Next, place the softened cream cheese in a medium bowl. (Cream cheese can be room temperature or softened in the microwave for about 30 seconds).
Now, stir in the parmesan cheese, bacon, chives, garlic powder and pepper until well combined.
Then, using a spoon or small cookie scoop, fill the mushrooms.
Next, place the filled mushrooms top side down on a cookie sheet lightly brushed with olive oil. Sprinkle a little reserved bacon bits on top of each mushroom.
Bake for 15 minutes. If you want the tops a little golden brown, pop the tray under the broiler for a few seconds, but watch carefully so they don’t burn!
Sprinkle with fresh chopped parsley if desired.
