This Asian Coleslaw recipe will be the first thing to disappear at your potluck or picnic! Made with a tangy peanut dressing, this is a nice welcome change from the traditional mayonnaise based coleslaw!

You will need:
1 (16 oz.) package shredded cabbage
½ medium cucumber, diced
1 red bell pepper cut into 1” matchsticks
1 (11 oz.) can Mandarin oranges, drained *(reserve ¼ cup juice for the dressing)
3 chopped green onions
For the dressing:
¼ c rice vinegar
3 TB peanut butter
3 TB gluten-free soy sauce
2 tsp sesame oil
¼ cup of the reserved Mandarin orange juice
1 clove garlic, pressed
1 TB brown sugar
For the garnish:
Chopped peanuts
1 chopped green onion
Toasted sesame seeds
Salt & pepper

Combine the cabbage, cucumber, bell pepper, oranges and green onions in a large bowl.
For the dressing, combine all dressing ingredients and put in a mason jar. Shake vigorously until fully combined or place in a small blender to mix. I use gluten-free soy sauce for a gluten-free coleslaw
Toss the vegetables with the dressing and garnish with chopped peanuts, chopped green onion and toasted sesame seeds. You can even add rotisserie chicken to your Asian coleslaw for a heartier side dish.
Add salt and pepper to taste.

This is such a great Asian coleslaw – the peanut dressing is the best balance of sweet and tangy. It’s great in my Asian Chicken Sandwich Wraps too!
