This Sea Otter Cookie Cake has layers of chocolate chip cookie dough and ocean blue buttercream topped with a cute little fondant sea otter on top!

My oldest son had a haircut when he was younger that made him look like an adorable sea otter! We nicknamed him sea otter and he has embraced that name! For his birthday I wanted to make him a cake with a fondant sea otter on top, but he doesn’t like cake. I KNOW, RIGHT? So instead I make him a mini cookie cake. It is a perfect celebration treat for someone who prefers cookies!

You will need:
- Chocolate fondant
- White fondant
- Black fondant
- Green fondant
- Blue buttercream (click here for the best buttercream recipe)
- White buttercream
- White pearl sprinkles
- Disposable piping bags
- D2 piping tip
- #14 piping tip
- Black food writing pen
- 12 oz. package semi-sweet chocolate chips
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup packed brown sugar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
Directions:
Preheat oven to 350 degrees. Combine flour, baking soda & salt in a small bowl. Beat butter, sugars, and vanilla in a large bowl until creamy. Add eggs and beat until combined. Mix in chocolate chips by hand. Grease 3 mini springform pans with cooking spray and press in cookie dough about 3/4 full. Bake for about 20 minutes or until dough is golden brown.
Pipe frosting on top of 2 layers and stack the cookies.
Place blue and white buttercream in a piping bag using the D2 tip and pipe rosettes on the top of the top cookie. Then with a piping bag filled with blue buttercream and the #14 piping tip, pipe on small stars around the edge of the top cookie.
Roll out 2 large ovals using the chocolate fondant for the head and body and 6 round balls of fondant for they ears, and legs the size of peas. Make a small tail as well.
Combine white and chocolate fondant to make a nice tan color. Roll out a small oval and attach on the stomach of the otter using a little water. Make little round eyes and an small oval nose out of black fondant. Attach eyes, nose, ears, legs and tail using a little water.
Place a pearl sprinkle in between the paws of the otter.
Using a black food marker, make whiskers.
Roll out small green oval fondant and twist for seaweed. Attach to side of cake.
Now you have an adorable sea otter cookie cake!
Bake regular cookies with the remaining cookie dough by dropping rounded tablespoon on a cookie sheet and baking until golden brown about 9-11 minutes.
