You will need:

Frito Corn Salad
2 (15 oz.) cans corn, drained
1 red bell pepper, chopped
2 cups Mexican cheese blend
1/3 cup chopped fresh cilantro
½ cup chopped green onion
2/3 cup sour cream
1 cup mayonnaise
1 tsp garlic powder
Juice of 1 large lime
½ of a (9.25 oz.) bag Chili Cheese Fritos
Salt and pepper to taste
Diced jalapeños (optional)
Directions for Easy Frito Corn Salad:
First drain the 2 cans of corn and place into a large bowl.

Next chop the red bell pepper, cilantro and green onion.


Add the chopped veggies to the bowl.

Now add the shredded Mexican cheese to the bowl.

Stir everything to combine.

Then add ½ of the bag of Chili Cheese Fritos.

In a small bowl combine the mayonnaise, sour cream, garlic powder and lime juice.


Then pour the dressing into the bowl.

Mix well and season with salt and pepper to taste.

This makes such a great refreshing salad that everyone loves. If you are making it ahead, just leave out the chips and stir in just before serving although I kind of like them soft too. Or just leave them out all together and serve them as chips and dip! Great for watching the game or tailgating too!
