This small batch 8×8 dish lasagna recipe is perfect for when you are craving lasagna, but you don’t have a crowd to feed! Still more than enough for a family of four, or for just 2 people with leftovers! Super easy to make, and if you want to use the no-boil lasagna noodles, it’s even easier! Bakes in an square 8″x8″ dish for quick and easy prep and clean-up!

You will need:
1 lb. ground beef
½ onion, diced
3 cloves garlic, pressed
1 (24 oz.) jar of your favorite marinara sauce (or homemade)
1 (15 oz.) container of ricotta cheese
¼ cup shredded parmesan cheese
1 egg
2 TB fresh chopped parsley
6 lasagna noodles, cooked according to package or the no-boil kind
2 cups freshly grated mozzarella cheese
8″x8″ baking dish
cooking spray
cheese grater (optional) – this is the best kitchen gadget I’ve ever bought!
Directions for Small Batch Lasagna:
First brown the ground beef in a large skillet with onion and garlic until done.
Next, add the marinara sauce to the skilled and simmer for about 10 minutes.

Mix together the ricotta cheese, egg, parmesan cheese and parsley in a small bowl, set aside.

Then spray an 8”x 8” baking dish with non-stick cooking spray
Now ladle about a ½ cup of meat sauce into the bottom of the dish.

Next lay out 3 of the noodles over the meat sauce

Then spread on half of the ricotta cheese mixture.

Ladle half of the meat sauce on top of the ricotta cheese mixture.

Sprinkle half of the mozzarella cheese on top of the meat sauce.

This is the best kitchen gadget I’ve ever purchased! I can grate a block of cheese in less than 30 seconds with no effort at all! You can get one on Amazon here.

Repeat the steps, with the noodles (I had one extra)

Then the ricotta cheese (I didn’t end up using all of this)

Next the rest of the meat sauce.

Finally the rest of the mozzarella cheese.

Bake in a preheated oven at 350 for 30 minutes covered with foil and then remove foil and bake an extra 10 to 15 minutes until bubbly and brown. You can put it under the broiler for a minute for extra browning.
