2 lb boneless, skinless chicken breasts or thighs
½ cup sundried tomatoes, sliced and drained
1 (15.25 oz.) can chicken broth
2 cups heavy whipping cream
1 tsp Italian seasonings
1 tsp red chili flakes
½ tsp freshly ground black pepper
1 cup finely ground parmesan cheese (I used fresh)
3 garlic cloves, pressed
½ cup chopped onion
3 cups fresh spinach
Cooked angel hair pasta
DIRECTIONS FOR SLOW COOKER TUSCAN CHICKEN
Place the chopped onion in the crock pot. Now add the chicken on top of the onions. Then pour in the chicken broth, pressed garlic, Italian seasonings, chili flakes, sun dried tomatoes and pepper in the slow cooker and stir a little to combine.
Now cover and cook 3-5 hours on high or 6-8 hours on low
Then, uncover and remove the chicken. Slowly whisk in heavy cream and cheese so it doesn’t curdle. Return chicken to the crockpot and turn on HIGH if it isn’t already. Cover and cook for 1 more hour. If you want a thicker sauce, remove chicken and add 2 Tablespoons of cornstarch mixed with 2 Tablespoons of cold water and whisk.**
Finally after one hour, add spinach and stir until wilted. Serve over angel hair pasta.

This is THE BEST Slow Cooker Tuscan Chicken recipe! The sauce is so rich and creamy and the perfect dinner for the family!
