Easy Churro Cupcakes

These Churro Cupcakes are so delicious, no one will believe you didn’t make it from scratch! Super easy to make using a box cake mix and container of cream cheese frosting! Perfect for your fiesta, Cinco de Mayo or anytime!

I just love the Cinnamon Toast Crunch Churros cereal! They are so tasty and adorable too! They make perfect toppers for your churro cupcakes!

You will need:

1 (16.25) box white cake mix

2 tsp ground cinnamon

1 tsp vanilla

3 eggs

1 cup water

½ cup vegetable oil

For the topping

1M piping tip

Disposable piping bag

1 tsp ground cinnamon

3 TB granulated sugar

1 (16 oz.) container store-bought cream cheese frosting

In a large mixing bowl, combine the dry cake mix and the 2 tsp cinnamon.

Mix in the rest of the ingredients with a hand mixer for about 3 minutes on medium speed

Place 24 cupcake liners in muffin tins and bake according to package instructions.

Cool completely.

Pipe frosting on top of cupcakes. 

Mix together the 1 tsp cinnamon and 3TB sugar and sprinkle over cupcakes

Place a couple of pieces of churro cereal on top of each cupcake.

The store-bought cream cheese frosting can be doctored up a bit by sprinkling the cinnamon sugar mixture on top. So yummy and I the think cream cheese frosting is the perfect match for these cinnamon flavored cupcakes!
